Abstract :
This presentation explores the growing popularity of Thai cuisine in the global arena. It critically examines the concepts of ethnic cuisine and culinary tourism and their implications on the consumption of Thai food by non-Thai consumers. Processes and actors in the globalization of Thai cuisine will be discussed. These include Thai migrant communities and restaurant entrepreneurship, gastrodiplomacy by the Thai state, and the competition in the food industry. Recent trends in Thai food consumption overseas will be presented.
